Philosophy

Food and wine pairing are integral to your experience with us. We offer one of South Africa’s most remarkable and extensive wine lists: the very best local and international wines are carefully chosen to enhance Harald’s innovative culinary creations. Wines are only chosen for our cellar if they reflect genuine authenticity, a distinctive personality and a true sense of place or ‘terroir’. A wide range of French, Italian, Spanish, Portuguese wines and German Rieslings are also available.

Our sommeliers will guide you through the journey and geography of the Aubergine wine list to find wines that best complement our cuisine, or introduce you to completely new wine experiences.

At last, Harald has opened his cellar to the public – and now you can choose wines from his expertly curated selection. Gain access to our famous selection of house wines, crafted specially for Aubergine by top winemakers, as well as a variety of boutique and hard-to-find wines and vintages.

Aubergine special cuvée

We have spent hours working with winemakers to create special wines that complement our cuisine and are made for daily enjoyment. This is how the Aubergine Special Cuvee was born: a family of ‘house wine’ to keep in our cellar and savour at every occasion.

Wine producers

Our wine list is represented by wine producers from all of South Africa’s regions and varietals, from the best-known names to lesser-known gems often from boutique wineries and smaller producers who create wines with passion and integrity.

Fleur du Cap Cab Sauv
Oak Collection 1986

The Fleur du Cap Cabernet Sauvignon 1986 presented in six different guises. Grapes from the same area, picked on the same day and fermented in the same way, were used to make the wine. In five instances the wine was matured for 24 months in oak barrels from five different regions: Nervers, Allier, Limousin, Spain and North America. These five wines are exclusive to this collection. The sixth wine is a blend of wines from the five different barrels and this became the Fleur du Cap Cabernet Sauvignon 1986 which was available at wine merchants. A wonderful opportunity to experience and assess the difference between the various woods used.
